Fresh Chillies

 

We grow a wide range of fresh chillies which become available during the harvest and each type has its own character, from the blinding heat of the Habanero to the blinding heat of the Scotch Bonnet. There are also some hot chillies.

 

Early season (March April) we supply seedlngs and small plants to the enthiast who wished to "grow their own".

 

Mid season we can supply flowering potted "ornimental" plants, all of which produce fruit which can be eaten. from the "coffee bean " chilli producing a mass of pea sized green, orange and red fruit. The Kirgyz Midnight, orange fruit maturing dark blue-black and pointing skywards from a half football sized bush. Looks fantastic on a kitchen window sill.

Chilli Paste / Sauce

 

Aside from fresh chilli fruits we produce a chilli sauce which is a melange of four types of chilli giving a careful mix of taste and heat. Habanero, Scotch Bonnet, Jalapeno and Anaheim mature fruits are selected and blended for flavour.

 

 

 

 

Full size picture of empty jar. Available in both colours, red and green, as are the contents, red having hot and rich spice flavour whilst green has a hot and fresh flavour. The labels both taste the same.  A full jar contains no preservatives so should be kept in the fridge when opened but will last 18 months unopened in a cool dark place. 2 Euros a full jar plus postage.

 

 

 

 

 

Culantro

 

Chadron benee - Coulante - Shodo beni - Bhandhania - Recao - Langer koriander - Ketumbar java - Pak chi farang - Ngo gai

 

 A herb know and used widely in Latin America, the Caribbean and parts of Asia where it is grown in walm, well irrigated and shaded areas. The fresh leaves are harvested to be used sparingly to give a unique aroma and characteristic flavour. Fresh leaves have a short shelf life and they tend to be picked at the time of use. It can be preserved, often in oil for freezing or in the form of "green sauce" in sealed bottles. Only in the early stages of growth is it used fresh, it tends to bolt at which point the taste and texture changes for the worse. Foliage growth is to be encouraged for prolonged harvest and flowering discouraged. They are not frost tollerant and must be regrown every season

 

Because of the detramental effects of storage on the flavour we can supply fresh leaves, dispached within a a short time of being cut, they should be stores in a fridge and used within the week at their best.

Lime Pickle

 

Our home made lime pickle is a perfect accopiment to many a meal. Marure chedder on granery bread cries out for our hot lime pickle.

 

 

 

 

 

 

 

 

Picalilli

 

 

Made from home grown vegetables, cauliflower, courgette, cuecumber, carrot, shallots, bramleys, red and green peppers. In al dente bite sized pieces. Simmered then matured for two months in a mix of malt vinegar, English mustard, turmeric, ginger, garlic, honey and a very slight hint of chilli. Does not contain any additional preservatives (apart from the vinegar)

Dried Banana, we obtain ripe organic fruit when the flavour is at it most vibrant and dry the cut slices in the fruit dryer. These are dried till they are chewey (not brittle and hard). They can be kept in sealed jars for a year without any loss of flavour yet no preservative is needed. Unfortunately they are addictive, the bananna flavour is concentrated by drying and this one litre jar contains the dried slices of 1.5kg of undried banana. To open a jar is start a short journey taking in the taste explosion, aching jaw muscles, loose fillings and 30 minutes later an empty jar. We can supply references from our product testers who don't know where we hide the full jars.  Occasionally there are "special edition" products like "winter walmer", dried banana slices marinaded in oil of aniceed producing a 'throat losenge' like no other. Wonder what a hint of chilli would do for it.
